Do you like cinnamon rolls? 
Today's recipe is easy to make. 
The taste is by far the best. 
Lemon icing is added to enrich the taste.
I'll start right away.




[Dough] 300 g bread flour 90 g warm milk 90 g warm water 35 g unsalted butter 40 g granulated sugar 5 g salt (2 tsp) 5 g instant dried yeast

[Filling] 35 g unsalted butter 80 g brown sugar(light or dark) 2 tsp cinnamon powder 50 g nuts, such as almonds and walnuts 30 g raisins [Sugar lemon icing] 80 g powdered sugar 1 Tbsp lemon juice [Egg wash] 1 egg + 1 tbsp water



1. Mix warm milk, warm water, sugar and instant yeast in a bowl.
Leave in a warm place for about 5-10 minutes to activate the yeast.


2. Add the bread flour, salt and softened butter and knead into a ball.
3. Knead by hand for about 8 to 10 minutes.
It is easy to knead by repeatedly stretching and rolling the dough.

4.When the dough is finished, put it back in a bowl and cover it for the first fermentation. Leave at room temperature or in a warm place until the dough has increased in volume by 2.5 to 3 times.

5.Degas the rising dough and roll it into a large rectangle with a rolling pin. The size is about 35cm x 28cm.




6. Make a filling by mixing all ingredients except raisins and nuts.
Make the filling while the dough is rising.

7. Spread the filling over the rectangular dough. At this time, leave 2 cm at the end.

And top evenly with nuts and raisins.


8. Cut the dough into 3-4 cm wide strips.

9. Please roll one by one.


10. Place each in a cupcake mold.


11. Cover the dough so it doesn't dry out and let it rise until doubled in volume (at room temperature or warm).


12. When the dough rises, brush the top and sides with egg wash.
(1 beaten egg + 1 tbsp water)


13. Bake in an oven preheated to 350°F (180°C) for 12 to 14 minutes.


14. While the cinnamon rolls are cooling, make the lemon sugar icing.

Mix powdered sugar and lemon juice to make thick icing.
If it is thin, add more powdered sugar.
On top of the completely cooled cinnamon rolls, apply lemon icing to the cinnamon rolls.
