Unlike sponge cake, the texture is dense. If you use dark chocolate with a high cocoa content, you can meet the high-end taste that is bittersweet. Today, I will post a Black Forest Cake that goes well with the cold winter.
Traditionally Black Forest Cake is served with a dark cherry filling and kirsch syrup filling each layer. 
But today, to make it easier, I won't be using cherry filling and kirsch.
It is also good for children as it does not contain alcohol.

*1 cup = 250 ml
*1 tbsp = 15 ml
*1 tsp = 5 ml



[For Chocolate cake] * 15 cm(6 inch) round pan
**Bring all ingredients to room temperature.

3 eggs (room temperature)
90 g granulated sugar (1/2 cup - 1 Tbsp)
80 g cake flour (1/2 cup + 2 Tbsp)
15 g unsweetened cocoa powder (3 Tbsp)
1/4 tsp baking powder
1/8 tsp salt
15 g(1.5 Tbsp) vegetable oil
25 g (2 Tbsp) warm milk
1 tsp vanilla extract(optional)

[cherry syrup]
30 g dark cherry juice(from canned cheery)
10 g granulated sugar
10 g hot water

[For Whipped Cream]
400 g heavy whipping cream
40 g granulated sugar 


Chocolate whipped cream : 50 g dark chocolate + 25 g milk

[For garnish]
some shaving chocolate
Deer chocolate topper: tempered dark chocolate
Some cherries
powdered sugar
[making sponge cake]

1. Soak an egg at room temperature in warm water of about 50 degrees for about 5 minutes to warm the egg.

2. Prepare the flour, cocoa powder, baking powder, and salt by sifting them in advance.

3. Beat the warmed eggs to the ribbon stage.

4. Add sifted flour and mix until no powder is visible. (At this point, preheat the oven in advance.)

5. After heating the milk and vegetable oil to about 50 degrees, add 2 ladles of dough and mix well.

6. Add the milk mixture to the dough and mix thoroughly. (Proceed quickly from now on.)

Place in a 7.6 inch (15 cm) pan and bake in an oven at 340 degrees Fahrenheit (170 degrees Celsius) for about 25 to 30 minutes.

8. Shock the cake a few times as soon as you take it out of the oven, then turn it over on a wire rack to cool completely.

9. When the cake is completely cooled, slice the cake into 4 pieces.



[Making Cherry Syrup]
1. Add hot water to granulated sugar and dissolve the sugar completely.
2. Add cherry juice and mix well. I got cherry juice from canned cherries.


[making whipped cream]
1. Add heavy whipping cream and granulated sugar and beat until medium peaks.
2. Put chocolate and milk in another bowl and melt the chocolate completely in a microwave or double boiler to make chocolate ganache. Let cool to a degree that is not hot.
3. Put 1/3 of the whipped cream in another bowl, pour all the chocolate ganache and fold it well. Chocolate whipped cream is ready.

[making chocolate decorations]

2. Put the template in a ziplock bag and draw it with melted chocolate.
3. Temper the chocolate before use.
4. For the deer topper, attach wooden skewers with chocolate.
5. Decorate after completely hardening.

[Assembling the cake]

1. Apply cherry syrup on the 1st layer cake sheet and apply chocolate whipped cream. Place the cherries (from canned cherries) on top of the cream. At this time, if you cut the cherries small, you can prevent them from getting caught when cutting the cake. Apply chocolate whipped cream until the cherry is not visible.
2. Place a 2-layer cake sheet, apply cherry syrup, and apply white whipped cream. The cherries were not posted on the second floor.
3. Follow the same process as for the first floor.
4. Place the 4th cake sheet and apply cherry syrup. Cover the entire cake with white whipped cream.
5. Apply the shaved chocolate only to the underside of the sides of the cake. Apply chocolate all over the top as well.
6. Glue the chocolate leaves to the sides.
7. Arrange the chocolate on top of the chocolate where you want to pipe it and pipe it with white whipped cream.
8. Decorate with pretty cherries.
9. For Christmas Cake: Sprinkle with powdered sugar, decorate with deer cake topper. Decorate with Christmas-inspired sweets, candies, etc.
