Chocolate is a very familiar but tricky ingredient to handle.

For the chocolate used here, use couverture chocolate containing cocoa butter to obtain more glossy and stable results.

And couverture chocolate must be tempered before use.

The purpose of this article is an introduction to the various ways of making decorations, so I will talk about tempering later.
